CULA 227 - Menu Design and Management3 lecture hours, no lab hours, 3 credit hours Utilization of the menu as an effective management tool. Impact of the menu on all aspects of the operation, including planning the facility, purchasing the food items, promoting the items to customers, and providing excellent service. Students will plan and write a variety of menus. Prerequisite(s): Eligibility for ENGL 101 and MATH 098.
