PAST 205 - Candy Making1 lecture hour, 2 lab hours, 1 credit hour Specialized class in candy making. Exploration of the varied possibilites available to the modern confectioner in the use of sugar crystallization in candy making. Provides the pastry student with the ability to manipulate crystalizing sugars suitable for a variety of candy products. Prerequisite(s): CULA 101 or PAST 101; and CUL 201; and CULA 103; and CULA 211 or PAST 103.
