Hospitality Management, A.A.S.


DEGREE: ASSOCIATE OF APPLIED SCIENCE
DIVISION: BUSINESS AND TECHNOLOGY

The Hospitality Management program is committed to providing trained employees for the hospitality industry and to create a positive, learning-centered environment that encourages lifelong learning in our community. 

The Hospitality Management Program provides academic instruction and practical experience in the field of hospitality.  The program includes instruction in hospitality operations and management, travel and tourism, hospitality revenue management and law, food and beverage management, and convention management.  Six distinct concentrations exist within the associate degree: 1) Restaurant Management, 2) Hotel and Lodging Management, 3) Tourism Management, 4) Beverage Management, 5) Meeting and Event Management, and 6) Catering Management

The program is designed to provide trained personnel for entry-level positions and mid-management positions in the hospitality industry. The program is also designed for students who wish to continue with their studies by matriculating in the School of Hotel, Restaurant, and Tourism Administration at the University of New Orleans.

Beverage Management
Knowledge of non-alcoholic beverages, wines, spirits, and beers as well as responsible beverage service, purchasing equipment, and effective beverage management are covered in this concentration.  Emphasis on beverage controls and the legal and business aspect of beverage management. 
 
Catering Management
This concentration prepares students for positions with institutional, managed services, or private catering.
 
Hotel and Lodging Management
This concentration focuses on supervision, revenue management, ethics, and the legal responsibilities involved in leadership. 
 
Meeting and Event Management
Sales, Convention Services, Marketing, Project Management, Cost Control and Revenue Management are addressed in this concentration
 
Restaurant Management
In this concentration, students learn how food is purchased, produced, and stored as well as food preparation techniques, menu design, and beverage pairing.  Sales and marketing management, labor management, and certifications are included in the program. 
 
Tourism Management
Management opportunities in tourism as well as in supplier businesses, such as Destination Management Organizations, transportation companies, tour guides, and product suppliers will be explored in this concentration.

Upon successful completion of the Hospitality Associate of Applied Science program, the learner will be able to:
 
  • List and describe operations relative to the provision of goods and services in hospitality management (SLO #1)
  • Distinguish and explain the reports of financial management to operations related to hospitality management (SLO #2)
  • List and describe hospitality computer applications, management information systems, and quantitative methods (SLO #3)
  • Examine foundations of management, leadership, and human resources in hospitality management (SLO #4)
  • Write effectively and use interpersonal communication skills (SLO #5)
  • Describe the impact of a global perspective and diversity issues as related to hospitality management (SLO #6)
  • Review the various career opportunities within the hospitality industry (SLO #7)
  • Examine the legal and ethical considerations affecting lodging organizations (SLO #8)
